Ok,
Here's a couple of pictures of my case for the 750wt. power supply and active hub. I've built 3 of these.
Just wanted to share.

is the IEC connector waterproof?

I used the same type of power connector on plastic shoe boxes that has worked for several years now. That connector being up under the protecctive lip should work very well.
What is that white grid material that you used? I put mine up on dowell rod stilts above the power supply.

looks like drop ceiling grid

Yup,
Drop ceiling grid with 1/2'' x 5"' pvc for legs. keeps about 3"' clearance above the p.s. with plenty of room for a service loop for the cat 5.

I think most people are getting marine size battery cases. I have seen them at walmart, auto stores

Don't the battery boxes have vent holes on the top? Maybe just the ones I got for the boat do. Looked like they would let in water to me.

A little gorilla glue will fill those holes very well.

Just silicone them or hot glue them up. There's enough room for ventalation from the space at the top cover for wire exit.
