is the only difference between spt-1, and spt-2  the 18/16 gauge (and of course, the size of the insulation because of smaller conductor?

SPT-1 & SPT-2 is the insulation type & thickness specification  It's not the spec for wire conductor size/gauge.  Be sure to order the correct vampire plugs and receptacles for the type zip cord you are using.

i was thinking on using the stuff without vamp plugs, like getting power out to the expresses, ssr4's, etc...

You have to  watch  Lowes carries a 16 awg spt-2 it does not fit  any vampire plug I know of with out first skinning some of the insulation off first.

but if i'm just running wire out to an express (using the screw terminals) then, i just want to make sure it can handle the amps i want to use.
my expresses will probably use about 5AMPS total full on, so i should be fine with either wire?
