The communication from a Freestyle to a SSR device....   is that PWM?

Well kind of pwm. But not really. It is a on signal that's waits a percentage of the on time of ac power. So when the ac cycle hits zero volts the Fs knows this and if the channel is suppose to be 50% it wait half of the time to the next cycle and turns it on. The triac turns off on its own at the next zero voltage, we can not control when it turns off.

So the timing is handled by the fs, but the "turn off" is handled by the triac on the ssr...

Once a triac is triggered, it continues to conduct until voltage reaches zero, then it shuts down until triggered again.  There is no way (short of burning it out) to shut the triac down once it is triggered and starts conducting.
