1 dongle can control up to 512 channels, each express has only 16 channels. your 5 * 16 = 80 channels. Yes 1 dongle will be enough and having a backup is great. all the parts are on mouser. from the equipment page click on the mouser next to the dongle and it will take you right to mouser with the dongle project (all parts).
