Has any one come up with a good idea for enclosing these?
I've pondered locating the Hubs inside and running cable out, but that won't be possible due to the length and number of cables... So I will have to do them at the location or near it....

I think you must have missed the other thread...
Quick summary, it looks like the $10 car battery boxes are a good fit after you seal any vent holes on the top.

Short version:

$7 group 24 battery box from Wally world, put the PS in the bottom, SS Hub sits on shelf midway in box, cords can go in
or out in 4 different places.  Top of box has small vent hole which should be sealed for better water protection.
