Aether II - Pig Tails

I'm making an assumption we strip back as needed the jacketing from the cut end of the pig tail.  Then stripping back some insulation off the white/orange and orange wires.  Then each one of the pigtails gets soldered in with one orange/white on the top and one orange on the bottom for each pig tail?

This is correct.  I coiled the rest in case there ever was a future need.  With RJ you never know.

Which pigtail connection should be the DMX IN vs the DMX OUT?

There is no difference between the two.  The second connection is for convenience to allow you to connect more DMX devices in sequence.
