I forgot to include the payment for insurance in the amount sent.  Should I just send an additional paypal for the insurance and if so how much should I add to the insurance cost for paypal fees?

Correct!!  Insurance can be added when I send out the shipping payment requests.  This payment is to get the parts and PCBs paid for and coming.  I will be sending out shipping payments when I get parts sorted and into the proper flat rate box, then you can add insurance if you desire.
