I used to tie up all my connections in plastic bags, but later noticed that condensation collected and with any free-flowing air had no way to evaporate  so it just collected in the bags.   usually didn't cause any harm but a few times caused the GFI's to trip.   Now I just keep the connections off the ground an pointed downward.

Cut a slit in the lid and put the end of your extension cords in them to keep them out of the weather.

I would think that would cause a lot of condensation and might be worse that not covering at all. Thoughts?

I use the plastic Crystal Light containers. I put a stick in the ground high enough so the bottom of the container when put on the stick is about 6 inches off the ground. I stuff the receptacle end of the extension cord into the container, put a slit in the lid for the wire and stick, and put the container on the stick. It hangs upside down so no water gets into it. You probably don't need the lid.

Of course I am in Florida. I don't have to contend with snow or freezing conditions. Although the temperature did drop down into the high 30 for a couple of hours so far this season. Had to put on two pairs of socks and a heavy winter jacket.  LOL

It's the humidity. I live in Florida too, and have donned extra clothes to deal with thirties and forties. I went to west Virginia, mid thirties, wearing at t-shirt, shorts, and gave my jacket to somebody because I was hot.
