Electronics / PIC Microcontroller books

Hi All,
I was wondering if any of you could recommend a good beginners book on constructing circuits using PICs or other microcontrollers. All the books I could find have either been way over my head or way too simple i.e how to make a light light up in series or parallel. I'm looking for something in the middle. I understand the basics but i'm not ready for a electrical engineering degree.
If there is a kit that comes with the basic stuff used to do the exercises in the book that would be cool too.

I am just getting started.  I ordered everything I need for my first Lynx Express and Dongle.  I ordered a PIC Kit 3 from Microchip and I believe the description said it comes with a PIC and 12 lessons.
